- Massive, thick-set body with a very broad, flat head
- Golden-yellow ground with bold, irregular dark bars
- Small black spots on the head, body and fins
- Rounded tail and rounded pectoral fins

How to tell it apart
Not to be confused with: Nassau grouper
Nassau grouper has a dark stripe through the eye, a tuning-fork mark on the forehead and a black saddle on top of the tail base. Goliath has none of these, and a much broader head.
Not to be confused with: Black grouper
Black grouper has squared-off blotches, small brassy spots and a square-cut tail. Goliath is yellower, with bold bars and a rounded tail.
